Just noticed that my train back from Doncaster on Saturday takes almost 2 hours 45 to get back to King's Cross. Presumably due to engineering works but where are they being diverted via?

There's work on the ECML on Saturday night / Sunday morning:

Gainsborough. See, for example, 1A65 1218 Sunderland to London Kings Cross. Click on Normal in top right of screen to get Advance mode with full routeing details.
It seems to me that at least some trains are scheduled to go via Gainsborough but avoid Lincoln by using the chord between Pyewipe Junction and Boultham Junction.
