Try clicking 'Advanced' at the top then searching. I've noticed however a lot of tours don't appear now, and freight's vanished too. Still get ECS workings though.

I may be wrong about this, but I think that the only charters that appear are those run by West Coast. This includes a number of tour operators such as Statesman and some others.

Indeed. Following some disagreements by Network Rail non-public trains (apart from ECS moves) such as freight and charter trains don't appear on the open websites at the moment (depsite being able to download their Working Timetable from the Network Rail website!)

But I don't think freight trains are included in the open timetables, except for the mail trains?

Or am I wrong?

Freight paths are shown in separate WTT sections to passenger trains - the index should point you in the right direction. It's worth noting that many WTT paths are rarely or never used, and trains running under STP or VSTP arrangements (as plenty of freight trains do) won't be shown in the WTT.
