We take the seven minute walk to the railway station, where we board the 1033 Southern service 1S17 to Hove, arriving there at 1147 on Sunday morning.
We next board the 2248 Great Western Railway service 1C33 to Bath Spa, arriving there at 2328 on Sunday evening.
That's over the 2 hour break allowed, and there are other options. I'm not sure if it counts in the overnight rules because this move happens during that period.Either way, we have plenty of time to walk the 150 yards to the bus station where we kip down for a couple of hours whilst waiting for the 01:40 National Express service 404 to Liskeard (Post Office) where we arrive at 06:32 on Monday morning.

It is in the original rulesYou shouldn't wait for more than two hours after the first available service (to any destination) has left, after allowing for the minimum interchange time.
The overnight break is optional. But, if one isn't going to take it, then one should observe the existing rules. There does seem to be some making up new rules as you go along, here. So if you arrive after 23:00 you can only claim the overnight break if there are no other services to catch and then you must wait the full five hours? I will try very hard to keep up.
We then get the 1400 Flexibus service 223 to Lea Marston (Green), arriving at 14:07 Monday afternoon.

It depends. Technically, if one uses a service before 5am, one has to make sure that there are no other services (IE: the 2 hour rule isn't broken). But, nobody should be discouraged from using the first service of the transport day. (Transport day generally re-starting at around 3-4am, depending.) This is the first time I've questioned it, because the gap for the "overnight" was so short. So do the existing rules require that if taking the overnight break you mustn't depart before 05:00?
