Annitsford station seems to have had two sites. The second was about 350m south of the first, so:

Annitsford (2nd station - 1878 to 1958)

Full details are on the "Disused Stations" website.

After Higham on the Hill, would we have first passed through the closed station of Nuneaton Abbey Street, then the open station of Hinckley, before reaching the closed station of Elmesthorpe?

Not necessarily. There was a chord from the Ashby & Nuneaton Joint at Weddington Junction and joining the Trent Valley main line just north of Nuneaton LNWR station. Thence onto the South Leicestershire line just south of the station. That would have missed out Abbey Street. Alternatively we could have gone directly from Stoke Golding to Hinckley via what seems to have been also part of the A&NJR.
